Healthy Baked Oatmeal

Yummy! A new way for a quick breakfast and healthy option…
Hubby came across this and asked me to make it. I added a few things of my own (a little more sugar, a little more vanilla, cinnamon and made blueberries with almonds and choc chip with almonds)

3 cups rolled oats
½ – 3/4 cup brown sugar
2 tsp baking powder
½ tsp salt
2 eggs
1 cup unsweetened applesauce
1 cup milk
3 tbsp butter, melted
1-2 tsp vanilla
1 tsp cinnamon (optional)

Top with (any variation you want)
Cranberries and pistachios
Blueberries and shredded coconut
Chocolate chips and almonds
Blueberries and almond slices

Grease muffin tin well. Set aside.
In a large mixing bowl, combine rolled oats, brown sugar, baking powder and salt. Set aside.
In another mixing bowl, combine eggs, applesauce, milk and vanilla and whisk thoroughly.
Pour wet ingredients into dry ingredients and mix.
Scoop batter into prepared muffin tin.
Bake at 375°F for 30 minutes.
